Made from the “Collina di Brindisi” olive… a variety that grows on the soft hills surrounding Ostuni. In these wild and rarely cultivated hills the groves are protected from the humid scirocco wind blowing in from north Africa but the fresh and dry breezes coming in from the Adriatic keep them strong and healthy.
The earth is calcareous and iron rich;- dark red soil on bright white lime stone that filters water excellently thus avoiding stagnation. These are the perfect conditions for these ancient trees, trees that generously gift us some of the world’s sweetest olives.
Being a DOP olive oil means that it is made from a minimum 70% of one variety (Ogliarola Salentina) and a maximum of 30% other varieties. The other varieties come from the same land but our secret is that they are from young trees planted 10 years ago, varieties such as Frantoio and Pesciolina amongst others.
The end result is a well-balanced fruity oil, green in colour with a particular flavour that make it ideal for using both in salads, meat and frying.
